Fody's Salsa Verde Meatballs

500g ground beef

1 egg

¼ cup gluten-free breadcrumbs

¼ cup green onion, finely chopped (green part only)

1 Tbspcoriander, chopped

Lactose-free sour cream, for serving (optional)

White rice, for serving (optional)

Lime wedges, for serving
  1. Preheat the oven to 350 degrees and spray a baking dish with cooking spray.

  2. Then mix your ground beef, egg, breadcrumbs, green onion, cilantro, and Fody's taco seasoning. Form the mixture into small balls.

  3. Next, heat Fody's Shallot-Infused Olive Oil in a pan over medium-high heat and brown your meatballs on all sides. (You may need to do this in batches so you don't over crowd the pan).

  4. Then place the meatballs in the prepared baking dish and pour Fody's salsa verde over the top. (Make sure all the meatballs are covered). Then place the pan in the oven and bake for 25-30 minutes.

  5. Once done, serve with lime wedges and lactose-free sour cream (if serving a an appetizer) or over white rice (if serving as a meal).
