One Pot Beef Mexican Pasta

 Ingredients

 

1 Jar Bay’s Kitchen Mexican Sauce


840ml Water


500g Minced beef


300g Gluten-free pasta


112g Shredded cheese


3 Spring onions – diced (only the green parts)


2 Tbsp Lactose free sour cream or Greek yogurt for serving


1Tbsp Garlic infused olive oil


1 Tbsp Chilli powder


1 1/2 Tsp Cumin


1 Tsp Oregano
Salt & pepper according to taste
Fresh cilantro or parsley for serving (optional)

Method

Preheat oven to 160 degrees C (325 degrees F)

Heat a large oven-proof skillet to a medium-high heat. Add garlic-infused olive oil. Once oil is hot, add ground beef. Use a wooden spoon to break up the beef. Once the beef is mostly cooked, add green parts of spring onion and 1/4 tsp. salt. Continue to saute for 3-4 minutes until the onion is softened.

Add chili powder, cumin, and oregano. Stir to combine and cook for 1 minute. Add Bay’s Kitchen Spicy Mexican Stir-in Sauce, water, pasta, and season with salt & black pepper (according to taste). Bring to a boil and reduce to a simmer. Cover and cook until pasta is al dente, about 10-12 minutes.

Once the pasta is al dente sprinkle with cheese and place in the oven just until the cheese has melted, about 2 minutes.

Garnish with sour cream or Greek yogurt and chopped parsley or cilantro.
